how to fillet a fish (a video)

It’s Wednesday. And that means it’s time for another Chef video.

This week’s video is how to fillet a whole fish. I must admit that I have never done this by myself. The idea daunted me. But after filming the Chef doing this — and making him go much more slowly than he has in decades — I feel confident I can fillet a fish now.

So will you.

Just two notes.

1. The natural sound effects of this might bother those of you who choose not to eat meat or fish. Sorry about that. There’s no other way around it. This is real.

2. We are still learning the mechanics of this tiny camera. We love it. But in shooting and editing this video, I have realized it is definitely not ready for its close-up. Sorry about the fuzzy focus on the pinbones. But you’ll get the idea.

    Cool video – I’ve had a go at filleting fish before, but never thought to pick out the bones.

    Just one thing – the picture and sound got steadily out of sync – don’t know if it was a problem at my end or at your end, but the sound finished a good 10s before the picture.

    Loving these videos. YES! They make me want to just carve up all kinds of things. You got me on a big knife sharpening extravaganza. I thought of you two the other day when deboning some chicken legs. You’d planted a seed with your carving the chicken video. I decided to get some legs and see what there was to do with them aside from plain bone in baking them. Thank you for the inspiration.

    thank you for posting this! i’ve always been afraid of doing it, even though i grew up watching my grandfather rip the guts from fish like it was no big deal. i’m so glad you and the chef did it.

    More, more, more Video’s please. It was my first time today watching all your video’s so far and I am loving them I love watching The Chef cook I love your cute kitchen, I love listening to Little Bean in the background. The gravy he made was mouthwatering. Although I do not like mushrooms I would make it with homemade roasted chicken stock and some sauted onions. Next time I catch some fish while fishing I will try the Filleting. And I cant wait to cut up my own chicken. Just a idea maybe do a Risotto next time.

    Great video, thanks. I’ve had a go before but usually had more waste that Chef, I guess it just takes practise!

    I also had the problem of sound and image being out of sync, but it was still fine to follow.
