It’s not that caviar. It’s eggplant caviar.

This is one of my favorite summer dips. Roasted eggplant, sauteed onions, fresh rosemary, and ricotta.

You can’t go wrong with this.

    Thanks for the awesome video! I’ve been wondering how to cook eggplant properly — I’ve only ever eaten it in restaurants as my attempts haven’t come out right, lol.

    Any ideas for alternate flavors if you can’t do garlic or onions? (reflux)

    This sounds great from the description, but would you please please please start posting little written summaries with your videos? I have 2 reasons for asking this: 1. I have a limited broadband package so I pay extra for stuff like videos; 2. I like to scan through something to see if I have the ingredients on hand, and also bookmark/save it on my computer to READ for when I want to make it! My brain is so much faster with words than video. Thanks!

      Tina, we will sometimes. Most times. But sometimes we just like to offer the videos. I’m sorry that you have to pay more for videos. Some stories we like to tell visually.

    when i was taught to sweat eggplant with salt after an hour or so I was told to rinse off the salt quickly and dry.….then use it.…please explain to me why here i shouldn’t as your recipe left this out.….not judging just trying to learn.….and i’m not a super salt person.

    these new videos are SO fancy! I like’em but I have to admit I kind of missed Shauna’s goofy laughter and commentary in the background! There was a certain joy, exuberance, and drawing in quality in the old school videos.

      Hey Sarah, thanks for the comment. You’re one of the few that preferred our goofy videos. I loved them too but in terms of teaching and sharing, we like the videos that are a bit more polished. We’re playing with the idea of a podcast soon, so you could hear all my goofy laughter and commentary there!

    I know what I’m making tomorrow night!!! I have an eggplant and a container of Ricotta in the freezer, thyme and rosemary in the garden. Fresh garlic and onions…and olive oil. And I think there’s a lemon hiding in the back. Yum.

    I have searched for a good eggplant kaviar recipe for soooo long. In russia they eat it all the time (you can buy it in the stores). But here in Germany I just could not find it anywhere.
    So I guess I can veganize it by substituting the ricotta with soygurt, right?
